The name Taleggio dates back to the early twentieth century, when the producers of the valley of the same name, in the upper Bergamasco, felt the need to distinguish their cheeses from those from other areas.
It is the beginning of the path that led this specialty to the recognition of the Denomination of Origin (D.O.) in 1988, which was followed in 1996 by the Protected Designation of Origin (D.O.P.).
Currently, the production, which has been for centuries exclusively mountain, has progressively extended into the Po Valley, where numerous dairies have reconciled traditional methods with technological innovations.
The supervision commission on marketing of Taleggio has been assigned, since 1981, to the Taleggio Cheese Protection Consortium (CTT).
Born in 1979 as a non-profit organization, the Consortium aims to protect, improve quality and promote Taleggio cheese, and acts through:
technical assistance to milk producers and processing dairies
control activity for the correct use of the denomination "Taleggio"
The identification mark on a form of taleggio
The dairies associated with the Consortium carry out the marking of each form that complies with the requirements specified in the production specification.
The weight of the product can vary by 15% depending on the ageing, they are artisanal and the seasoning varies its weight
