The salami Milano, also called Crespone, is a salami originally produced in Milan based on pork, beef, pepper and various spices, with a characteristic fine grain.
Milan salami was originally produced in the lower Milanese and Lodi area, especially in the area between Codogno and San Colombano al Lambro: production is nowadays widespread throughout Lombardy. The salami, typically in diameter between 6 and 11 cm, is characterized by a very fine grain with the parts of fat and thin distributed in a very uniform way thanks to the help of a particular tool called "finimondo", a sort of particular meat grinder that grinds the meat finer, so as to allow a better distribution of the parts of fat. The salami meat is then placed in a natural casing; everything is left to mature for 3 to 9 weeks depending on the diameter of the salami.
Milan salami presents a sweeter and more delicate taste.
