From the Emilian tradition comes this salami that has distinguished itself throughout the world.
Only Italian pork legs and salt, no additives and preservatives, which are processed and matured in the Province of Parma as a regulation that regulates the production, have allowed this tasty sausage to obtain the PDO mark from the European community.
It is called Parma sweet ham because compared to other hams, little salt is used, the careful processing and slow aging characterize its delicate taste.
Already in the Middle Ages it was identified as a noble traditional and lean product, its sweet and refined taste, its intense but low-calorie taste make it a product appreciated by everyone, from children to the elderly.
CROSTATA WITH TOMATOES ROCKET AND PROSCIUTTO CRUDO DI PARMA
12 fresh tomatoes
500 g puff pastry
100 gr mascarpone
2 handfuls of rocket
6 slices of Parma Ham PDO
1 tablespoon of dried oregano
Salt and black pepper
Extra Virgin Olive Oil and balsamic vinegar, for seasoning
Cut the tomatoes in half, season with salt, black pepper and oil, place them on a baking tray.
Sprinkle with the dried oregano, bake in a hot oven (180 ° C) and cook for about 20 to 25 minutes.
When the tomatoes are ready, remove them from the oven and keep them warm.
Make a rectangle of puff pastry measuring 30 x 20 cm and lay it on a slightly buttered baking sheet.
Bring the oven to a temperature of 200 ° C and bake the dough for 15 to 18 minutes until it has grown and will have reached a dark golden color, remove from the oven and allow to cool.
Stuff the puff pastry with the tomatoes, small flakes of mascarpone, rocket and slices of Prosciutto Crudo di Parma DOP.
Serve hot, seasoned with olive oil and balsamic vinegar.
