the single stewed smoked pancetta is a product obtained from the trimmed pancetta, deprived of cartilage and salted by means of brine made up of spices and flavorings. After salting, the product is slowly processed for at least 24 hours, cooked in steam-saturated ovens and lightly smoked in order to give it a natural browning and the characteristic smoky flavor. The bacon stewed in slice has a pink color for the lean part alternating with white streaks of fat, the taste is aromatic and slightly smoky.
COLD PASTA WITH PEARS SMOKED PANCETTA AND PECORINO
380 gr macaroni pasta
400 gr pears
100 gr Smoked Pancetta
50 gr chopped nuts
100 gr Pecorino Romano DOP
60 gr extra virgin olive oil
1 teaspoon of thyme
salt and pink pepper
Cut the pancetta into strips, put it in a non-stick pan for about 3 minutes to high heat and, when it becomes crispy, let it rest on a paper towel to drain the excess grease. Wash the pears and dice them.
Boil the pasta, drain it and let it cool in a bowl with a little oil.
Mix the cold pasta with the pears, the chopped thyme, a pinch of salt and pepper.
Add the crispy bacon and the nuts.
Finally cut the Pecorino into tiny pieces and put it into the bowl. Mix very well.
