Caciotta is a cheese without rind, with the outer surface showing the signs of the fuscella. White in color, as well as the internal pasta, which is soft, moist, small and sparse, with irregularly distributed holes.
It is not a spreadable cheese, but its adhesiveness allows the taster to appreciate its lactic component.
